Berry season is officially upon us, and what better way to use them than to make some homemade jam you can feel good about eating?! With no added sugar and a little fiber, this recipe is sure to satisfy your sweet cravings without throwing off your macros. Use on some gluten free toast, on top of some protein pancakes, or try it on the seed cracker recipe (also on this blog). We love this recipe with fresh blueberries that pair so well with lemon, but you can substitute with any strawberries or even blackberries!
INGREDIENTS
1 cup blueberries
2 tbsp lemon juice
3 tbsp chia seeds
DIRECTIONS
In a small sauce pan, combined the blueberries and the lemon juice and cook over medium high heat.
Cook for 5-6 minutes while stirring until the berries start to break down and have release most of their liquid.
Blend using an immersion blender directly in the pot until smooth. Simmer over medium-high heat for 5 minutes until the puree thickens.
Transfer small bowl and stir in the chia seeds. Let sit for 10 minutes, or until cool, to serve. You can store it in a jar or air tight container for up to 5 days.
