This simple little dish with light summer flavors is quick and easy to make. The delightful medley of crisp cucumber, citrusy dressing, and vibrant fresh herbs, perfectly complements the nutty flavor of the quinoa. It pairs perfectly with roasted lamb, but is also very versatile and is just as delicious on the side of some grilled chicken or fish as well!
INGREDIENTS
1 cup quinoa, cooked
1 cup peas, thawed if frozen
1 cucumber, diced
1 green onion, sliced thin
4 leaves mint, chopped
3 tbsp extra virgin olive oil
2 tbsp lemon juice
Salt & Pepper, to taste
1/4 cup walnuts, chopped
DIRECTIONS
In a large bowl, mix together the quinoa, peas, cucumber, green onion, and mint.
In a smaller bowl, stir together the olive oil, lemon juice, salt, and pepper.
Once well combined, pour the dressing over the quinoa veggie mixture.
Add in the walnuts, then toss until everything is coated, and enjoy!
