Halibut with Sweet Potato Fries and Green Beans

This is a sheet pan recipe, so it is a great time saver on nights you have limited time to make dinner, or when you are meal prepping but don't want it to take all day! On top of saving you from long cook times, this halibut  also has great macros and is a delicious way to increase your omega-3s. While it is plenty flavorful all on its own, top the dish off with red pepper flakes if you are looking for a little more heat!

INGREDIENT

2 lbs halibut, cut into 8oz portions
2 medium to large sweet potatoes, peeled and cut into wedges
5 tbsp olive oil
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp thyme
1 tsp lemon zest
1 pound green beans, trimmed

DIRECTIONS

Preheat oven to 425 degrees.
Toss the sweet potato wedges with and 1/4 teaspoons salt and pepper and 2 tbsp oil. Spread the sweet potatoes on a baking sheet a and roast for 20 minutes. Mean while mix the remaining 3 tbsp of oil, thyme, and lemon zest in a small bowl.
Remove the sweet potatoes from the oven and push the potatoes to the side, keeping them in a single layer. Add the fish and green beans to the pan, then brush the oil mixture on top. Sprinkle with the remaining salt and pepper. 
Roast for 10-12 minutes until you see the fish is flaky and beans are tender.
