Heirloom Watermelon Salad

Watermelon salads are certainly not a new trend, but the medley of flavors in this recipe is just perfect for summer! Something about the way such a little bit of salt can amplify the flavor of the heirloom tomatoes, and the acids of the lemon balance out the watermelons sweetness, this dish is sure to leave you wanting more!

INGREDIENTS
2 tbsp olive oil
Juice from 1 lemon
Pinch of salt
3 heirloom tomatoes, diced
1/4 watermelon, diced
1/2 red onion, sliced thin
1/2 cup basil, sliced into thin strips
Zest from 1/2 lemon

DIRECTIONS
In a large bowl, combine the olive oil, lemon juice, and salt. Whisk together with a fork.
Once combined, add the tomatoes, watermelon, red onion, and basil to the bowl. Gently stir until the dressing is evenly distributed.
Top with lemon zest and enjoy!
