Have you been craving mashed potatoes, or looking for a great seasoned potatoes recipe to pair with your favorite protein? Then these herbed smashed red potatoes are perfect for you! Not only are they delicious, but these babies are also gluten and dairy free, so you (and your stomach!) can feel good about enjoying these or sharing them with friends! Chunky and rustic, these potatoes will compliment just about any dish you prepare, and look great on the plate too!
INGREDIENTS
1 pound red potatoes, scrubbed and quartered
1 1/2 tsp sea salt, divided
1/4 tsp freshly ground pepper
3 tbsp olive oil
1 cup chicken stock
3 tbsp chopped chives
1 cup watercress, chopped
DIRECTIONS
Place the potatoes in a medium pot with the chicken stock, 1 teaspoon of salt, and just enough cold water to cover the potatoes.
Bring the water to a boil and cook until the potatoes are tender, about 10 minutes, or until you can place a fork through the potatoes without resistance.
Drain the potatoes and return them to the pot. Add the remaining 1/2 teaspoon salt and olive oil, and then mash with a potatoes masher or the back of a fork.
Stir in the ground pepper and chives, then fold in the watercress. If they seem a little dry you can add a little extra chicken stock, but only add a tablespoon at a time.
Makes about 4-5 cups.
