This dairy-free recipe is a healthy version for Waldorf salad using bib, iceberg, or romaine lettuce as the wrap for a snack. You may also want to use this recipe for lunch or dinner by throwing it onto some spinach, kale, or arugula. It is yummy and full of lean protein, and the few carbohydrates in has are nutrient dense sources! It is cool, crisp, and refreshing, making it especially wonderful on a hot day. You can use your leftover roasted chicken or make your chicken from scratch without much more effort.
INGREDIENTS
2 tbsp low-fat vegenaise
1 tsp apple cider vinegar
1 tsp celery seed
Salt & pepper to taste
8 ounces cooked chicken breast, cubed or shredded
1/2 of a medium apple, diced
1 celery stalk, diced
2 tbsp chopped walnuts
Lettuce of your choice
DIRECTION
In a small bowl mix together the vegenaise, apple cider vinegar, celery seeds, salt, and pepper.
In a large bowl combine the chicken, apple, celery, and walnuts. Pour the vegenaise dressing over the top and mix well.
Either pour on top of lettuce as a salad, or scoop into individual leaves for a wrap style meal!
