Who doesn’t love a lazy Saturday morning, sipping on your warm cup of coffee while cooking up a childhood favorite: pancakes! Just because you have goals to hit doesn’t mean you can’t take advantage of the one quiet morning you will have all month- cue this perfect protein powder pancakes recipe. These are easy to make, requires only a few ingredients, is gluten and dairy free, has no added sugar. There really is no downside to these golden, fluffy, yummy pancakes!
2 scoops (1 serving) VIVL Nutrients® PlantProtein-L
1 ripe banana
2 eggs
1/4 baking powder
Water (as needed)
Separate the egg whites from the yolks into 2 medium bowls. Beat the egg whites on high for 2 minutes until they form soft peaks (the peaks should fold over when the beaters are lifted). Set to the side.
In the bowl with the yolks, mash the banana throughly. Add the baking powder and protein powder to the banana and yolk mixture. Stir until combined.
If the mixture is too thick, add 1 tbsp of water at a time until batter is smooth.
Gently fold the egg whites into the banana mixture until combined. Place your skillet on low heat.
Scoop 1/4 c. of the mixture onto the skillet and cook for about a minute on each side, until golden brown. Enjoy!
