INGREDIENTS
1 cup almond meal
1 cup Plant Protein-L protein powder
1/2 cup ground flax seed
1/4 cup shredded coconut, unsweetened
1/4 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
1 tbsp cinnamon
1 tsp baking soda
2 large eggs
1 tbsp pure vanilla extract
1/4 cup maple syrup
1/2 cup coconut oil
DIRECTIONS
Preheat oven to 325 degrees. In a large mixing bowl, sift dry ingredients, add the seeds and coconut to the mixture and mix well. In a separate bowl, combine the eggs, vanilla, maple syrup, and coconut oil.
Fold the dry ingredients into the wet, and stir until mixed well. Drop the batter by the tablespoon onto a parchment-lined baking sheet, approximately 2 inches apart. Should make about 12 cookies.
Bake for 15 minutes, remove from oven, and cool before serving.
