These kebabs are a little different than your typical skewer with cubes of meat and veggies. Ground turkey is used to form an elongated meatball and then grilled. This can be served as an appetizer or as a main course. The spices make it so flavorful, and you can even use fresh turkey breast and grind it in a food processor or just buy ground turkey.
INGREDIENTS
1 1/2 lbs ground turkey
1 garlic clove, minced or grated
2 tbsp olive oil
1 egg
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp kosher salt
1/4 tsp cinnamon
1/4 tsp cayenne pepper
2 tbsp parsley, finely chopped
1 tbsp mint, finely chopped
1 tbsp cold water
DIRECTIONS
Soak wooden skewers in water for 30 minutes. Preheat the grill on medium-high heat.
Using a food processor add the spices, egg, half of the olive oil, and herbs then pulse. Once it is blended well, transfer to a bowl and combine the mixture with the ground turkey.
Lightly grease your hands and form meatballs that are longer and oval in shape. Drizzle the meatballs with the other tablespoon of olive oil and slide the skewer through them. Place the kebabs on the grill and cook for about 5-6 minutes per side. Be careful not to overcook or they might dry out.
